Chocolate and peanut butter swirl together to make these mini cupcakes extra delicious!
Calling all of you chocolate and peanut butter lovers!
You know who you are.
You are those friends of mine who, whenever they hear those two magical words together, come RUNNING.
Case in point: This past weekend, I got together with a bunch of girlfriends for our monthly book club. When I placed these Mini Chocolate and Peanut Butter Cupcakes on the table, everyone politely smiled and oohed and ahhed a bit over the cute "chocolate" cupcakes.
But as soon as I told them that there were two layers of peanut butter layered inside, they all immediately disappeared. Every. Last. One.
So if you want to get in on the action, here's how:
Start with a box of Betty Crocker chocolate cake mix. You can choose whichever luscious chocolate flavor you'd like – they have some yummy ones! Mix up the batter according to package directions, then set the mixture aside. Don't bake it yet!
Use an electric mixer to whip up the second part of the cupcakes – the peanut butter filling. Just combine an egg, cream cheese, PB and powdered sugar, and you're good to go. I dare you not to lick the bowl!
Then comes the fun part – assembling the cupcakes. Begin by placing 1 teaspoon of the chocolate batter in each baking cup. Then layer 1 teaspoon of the PB mixture on top. Then repeat with a layer of chocolate batter, and then a final layer of peanut butter.
Top with a sprinkling of chocolate chips, and then pop them in the oven until they are cooked through.
I advise you to let them cool, but that requires lots of patience. I may have just immediately popped one delicious bite in my mouth.
