After all of the positive feedback from the Oreo-stuffed chocolate chip cookies, I decided that you all must enjoy Oreos just as much as I do. Which is why when I came across this recipe for Cookies and Cream Cheesecake Bars I thought you all should know about it. Using Recipe Girl's recipe and my food processor, I baked up a batch of these last Sunday. It's safe to say that these treats are a new favorite of mine. Not only are they incredibly delicious (and addictive), but they're super easy to make! Just follow these easy steps to make your own!
Materials:
1 package of Oreo Cookies
4 tablespoons unsalted butter
24 ounces of cream cheese
3/4 cup granulated sugar
3/4 sour cream, at room temperature
1 teaspoon of vanilla extract
1/2 teaspoons salt
3 large eggs, at room temperature
Step 1: Preheat your oven to 325 degrees F. Line a 9 x 13 baking pan with aluminum foil and spray with non-stick spray.
Step 2: Make the crust first. Add exactly 28 Oreos (that's 2 full sleeves) to your food processor. Process until the cookies are finely ground.
Step 3: Pour your Oreo crumbs into a large mixing bowl and add in your melted butter. Using a flexible spatula, mix until the Oreo crumbs are moistened.
Step 4: Distribute the crumbs evenly into your foil-lined pan. Pop the pan in the oven for 10 minutes. After 10 minutes, pull the pan out and let it the crust cool. Leave your oven on though because the cheesecake is going right back in.
Step 5: While your crust is baking, you can start on your filling. Break your remaining Oreos in half and add to your food processor. You only need to pulse about 5 times here. You still want some larger cookie chunks for the filling.
Step 6: Combine sugar and softened cream cheese in a large mixing bowl. Beat until the mixture is smooth and fluffy (about 2 minutes). Then beat in your sour cream, vanilla extract, and eggs. Note: add your eggs in one at a time, beating after each addition.
Step 7: Once you're sure everything is combined, add your chopped Oreos into the filling. Using a spatula, fold your Oreos in. Already looks delicious, right?
Step 8: Pour the mixture on top of the crust and spread evenly with a spatula. Bake these in the oven for about 40 minutes. Remove the pan and set aside to cool completely. Once it's cool, place a sheet of foil over the pan and place it in the fridge for a few hours or overnight (if you can wait that long). The waiting is the hardest part of this whole thing.
