Classic Buttermilk Waffles
from The King Arthur Flour's Baking Companion

2 large eggs
1 3/4 cups buttermilk (I use a combination of milk and yogurt)
1/2 cup (1 stick, 4 ounces) butter, melted and cooled to room temperature
2 teaspoons vanilla extract
2 cups pastry flour or 1 3/4 cups all-purpose flour
2 tablespoons sugar
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt
